OK. Here's what happened.
I was messing about with a layout and thought I would try the photos in grayscale. So I applied the grayscale effect to them. I decided I didn't like the effect so I just closed the album thinking I'll come back and try something else later. When the program asked if I wanted to save the current album, I chose no.
When I reopened the album later all the grayscale changes were still there! I closed the program and tried again. The thumbnail in the open album dialog still shows the color thumbnail but upon opening the photo is still grayscale.
Here's what I did to duplicate the problem.
1. Create test album with one page.
2. Import color photo to page.
3. Save album.
4. Close program.
5. Open album again and apply grayscale effect to photo. Do not save.
6. Close program but when asked to confirm changes, choose no.
7. Open album again and grayscale changes are still there.
Observations: I tried this with several different effects, one at a time and it only seems to happen when using the grayscale effect.
Can anyone else confirm this before I uninstall/reinstall to see if this clears it?
